What types of commercial ovens are there?

Broadly speaking, there are two types of professional ovens: Combi ovens and convection ovens. But the truth is that within these two categories, there are many different options that you need to consider before buying your new commercial oven. For example, both types are available in bakery dimensions (60x40 cm trays) as well as in GN dimensions (53x32.5 cm) which restaurants use.

In addition, there's the somewhat newer category called speed ovens, turbo ovens, or express ovens. A beloved child has many names. In short, it's an oven that combines microwaves with hot air and, in some cases, steam. The UNOX SPEED-X excels here, being quite revolutionary with its automatic washing system.

The concept determines which oven you should buy

The first thing you need to discuss with your oven supplier is what kind of food you want to prepare – both in the short and long term. Perhaps you want to start with a simple concept (menu). But if you succeed, you might want to expand. And here it's important that you have an oven that can handle both needs. Many choose to buy simple and inexpensive ovens to start with, for example, a manual oven with 5 trays, and then invest in something larger and better when they want to expand. If you only want to bake

If you don't want to cook in the oven but only bake, then you should choose a convection oven, preferably with steam. If it's a small need, it can be with manual control (BAKERLUX & LINEMISS), but if you have a larger production and with several different baked goods, you will probably benefit from a proper baking oven with more options for controlling baking phases, fan speed, and steam. It can be important that the oven can extract all humidity from the chamber. Here you can consider BAKERTOP (ONE or PLUS).

If it's only for bake-off, we have the most popular commercial oven for the task, namely BAKERLUX SHOP.Pro, which is found in many petrol stations and supermarkets.

For small kitchens

Here we can offer commercial ovens in compact versions. Both combi ovens (CHEFTOP) and manual ovens (BAKERLUX & LINEMISS) and bake-off ovens (BAKERLUX SHOP.Pro) are available in compact sizes.

Many chefs or large menu = combi oven

If you need a large setup with many different cooking methods, or if you have many different chefs who need to operate the oven, you should choose a good digital commercial oven with steam. For example, in community centers or in large restaurants and canteens.

Combi ovens (or combi steamers) typically have automatic cooking with a core probe, steam programs, and a washing system, and are also available with many pre-programmed recipes.

The CHEFTOP (PLUS) combi oven even has Wi-Fi connectivity and allows you to monitor consumption on your phone. This means you can ensure that the oven is used correctly and, not least, cleaned. You can, among other things, monitor the oven's power consumption and see what it costs to prepare your dishes.

The ability to control humidity

Premium commercial ovens such as CHEFTOP (PLUS) can better maintain humidity at a stable level, which minimizes meat drying out and generally provides a better result and cooks in less time.

A commercial oven with recipes

Another advantage of this oven type is that recipes can be programmed, so all employees can quickly start a new dish. In addition, some models allow different dishes to be cooked simultaneously, with the oven "telling" you when a dish is ready to be removed.

Digital commercial ovens are often expensive and more costly to operate and maintain, but are also an invaluable aid in a busy professional kitchen. Available in many sizes and up to 40 trays.

The simple commercial oven (Convection oven)

Convection ovens are also known as hot air ovens and are the right choice for you who don't need many options in your commercial oven. It is as powerful as a combi oven and can be equipped with much of the same extra equipment - including steam. The difference is that it cannot control the humidity in the oven chamber in the same way as a computer-controlled combi oven, and you often cannot control the fan speed.

The most important difference between a combi oven and a convection oven, for many, is that the convection oven usually does not have a washing system. Therefore, it must be cleaned in the traditional way. We therefore do not recommend it for kitchens where a lot of greasy food is prepared that soils the oven chamber.

Convection ovens are available in many different models - either as a manual model or with some form of digital control. Manual control has the advantage that it is cheaper to repair if the oven breaks down. And it is incredibly user-friendly, as there is fundamentally nothing you can set incorrectly. It's actually easier to operate than an oven at home. Digital convection ovens can often be programmed with simple recipes and have a few more options, so here you can get some of the user interface from the more expensive combi ovens at a lower price. It is possible to purchase steam versions with either nozzle or injection steam. Available in many sizes and up to 40 trays.

Compact ovens

Compact ovens are a smaller version of a combi oven or a convection oven. Here you have all the same features as in the large oven, just in a smaller version.
Compact ovens are often quite expensive to purchase and service, but fit perfectly into smaller kitchens and places where space is scarce. The power (Kw) is the same as in a standard size commercial oven, as they often have the same number of heating elements, just in a smaller size. In compact ovens, you have space for trays in size GN 1/1 or GN 2/3.

Used commercial ovens

Many who start a new restaurant, café, or micro bakery, start with a used oven. This makes a lot of sense because it gives you more financial leeway and you gain experience with the oven, which is valuable the day you need to invest in a new one. When you buy a used oven, you don't get a warranty, and if it's more than 8 years old, you risk not being able to get spare parts for it anymore. That being said, you can get a really nice oven for a cheap price.

Commercial oven for community center

We always recommend a CHEFTOP PLUS, preferably with 10 trays. This is because it is well suited for rental.

  • You can, via your phone, see how and how much the tenant has used the oven.
  • You can remove functions on the display, making it easier for the tenant to use the oven.
  • There are saved recipes and cooking with a core probe, so baking stops precisely when the meat is done.
  • There is a complete washing system, where the oven automatically draws in the necessary soap. The user just has to press "cleaning" and select the recommended program.

Commercial oven for Café

The small café that only needs to bake some buns and a little cake, should look towards the small bake-off/shop oven called BAKERLUX SHOP.Pro. Most choose the TOUCH model. It has hot air (with 2 fan speeds), steam, up to 9 baking phases, and saved programs.

The large café that also serves hot food, should look towards the combi oven CHEFTOP ONE if use and budget are limited, or a CHEFTOP PLUS if the oven is used for more than 3-4 hours a day. This is available as standard for GN 1/1 trays, but also in compact models and large models (GN 2/1).

Accessories for commercial ovens

Most people choose a base frame for the oven, but some models can also be placed on a table or a wall bracket.

A water filter that removes lime from the water is necessary in most of Denmark when you use steam in your oven. Therefore, we sell this to most of our customers.

A steam condenser that extracts steam and smoke from the oven is a popular solution for those who have not installed an industrial hood in the kitchen. It is a box that is mounted directly on the oven. It must be connected to electricity, water, and electricity.

Baking trays are available in many shapes and materials. The most important thing is that you choose the right size (e.g., GN 1/1, GN 2/3, or 60x40 cm). Then you can assess whether you need special trays or if a flat baking tray is enough.

When you buy an oven that needs to be connected to a drain, we will always recommend a drain kit with a water trap, so you ensure that sewer odor does not enter the oven.

Zanussi commercial ovens?

Zanussi is one of the most well-known brands in Europe and Denmark, and their manual commercial ovens from the "Crosswise" series are found in many places. They last for many years and are therefore a good investment for those who don't need a lot of functions but just want a workhorse.
