Refrigerated toppings units, also known as canteen coolers, are used to keep various raw materials and ingredients cold. The models are flexible, allowing you to configure them with cross ribs so you can use smaller, but more, canteens than shown in the picture. You can choose your refrigerated topping unit and buy it online, or you can contact us for help selecting the right size and the right gastronorm containers.

The models are either for:

  • GN 1/3 (Here you can use GN 1/3 containers up to 15 cm deep and GN 1/6 or GN 1/9 when using ribs)
  • GN 1/4 (Here you can use GN 1/4 containers up to 15 cm deep or GN 1/2)

Choose between models with a stainless steel lid or with a glass topping unit. You can also consider buying a saladette/sandwich counter, i.e. a refrigerated counter with an integrated canteen cooler.

Tips for using refrigerated topping units and sandwich counters

Remember that open refrigeration units, such as refrigerated topping units and sandwich counters with integrated canteen containers, are not designed for cooling down and cannot guarantee a constantly low temperature.

It is your responsibility to ensure that what you store in the canteens is at the correct temperature for food (below 5°C), and if you cannot comply with this, the 3-hour rule (buffet rule) applies. In that case, you must replace the food every three hours to be on the safe side.

We recommend that you cool your food (including salads and vegetables) before placing it in the refrigerated topping unit.

You should also avoid having fryers, ovens, and other hot machines near your refrigerated topping unit.

When you are not busy, you should close the lid to keep the temperature low in the refrigeration unit.

Choose a cooler with ventilated cooling, if possible. It can better guarantee a constant temperature. A cooler with static cooling or cooling with a fan/ventilator is not nearly as effective.

If you are working with raw meat and fish, the Danish Veterinary and Food Administration is particularly attentive to your compliance with the regulations. Here, we recommend that you choose a model designed for the purpose.
