The convection oven is just as powerful as the combi oven, the oven chamber is the same, and it is available with some of the same extras. Typically, the control is manual with rotary knobs.
Manual control has the advantage that it is cheaper to repair if the oven breaks down, and it is incredibly user-friendly, as there is basically nothing you can do wrong.
It is possible to have the oven with steam, which is important when baking bread, and it makes it easier to clean the oven.
A convection oven is usually much cheaper to buy than a combi oven, so if you can do without pre-programmed recipes, etc. you can save around 40% on the purchase.
Convection ovens are for simple needs, but they fall short when it comes to more advanced needs. That's why we typically recommend combi ovens for restaurants where you cook a lot of different things.
For example, if you want to make roasts and other complex dishes of high quality, you should choose a combi oven. It offers better control of the steam and thus the moisture in the meat, which gives a better result and less waste, as the meat does not dry out.
UNOX convection ovens cannot be stacked . So if you want two, they must be placed next to each other, on their own stand or shelf, or on a tabletop.
If you want to use the steam function on your convection oven, you still need to have water treatment on. So you won't save anything here.
Convection ovens do not have a washing system , so you have to manually clean the oven every evening. This can be done by turning on the steam for a few minutes, then spraying it with cleaning agent and then cleaning with a cloth.
The fan in our Unox convection ovens only has 2 speeds . So if you want better control over the fan, choose a combi oven that has 4 speeds, or one of our Eurofours bakery ovens that has 10 speeds. These are designed specifically for baked goods.
Manual ovens naturally only have one baking phase . In Unox' digital ovens and combi ovens you can program up to 9 steps in the recipes. So if you are making something that needs to have one temperature at the beginning and another at the end, this can be programmed into the recipe.
Most of the ovens we sell to restaurants are digital ovens because it ensures consistent quality every day, no matter which chef is operating it. You don't get that assurance with a manual convection oven.
