Professional stoves and cooking tops for commercial kitchens

A professional stove or cooking top is built for a completely different load than equipment for private kitchens. In restaurants, canteens and commercial kitchens, the equipment must be able to be used for many hours every day, handle large pots and at the same time be easy to work with and clean.

At Cosina you will find professional gas and electric stoves and cooking tops for commercial kitchens. The range includes gas hobs, electric solid plates, glass ceramic hobs and induction. You can put together the cooking section according to the size and production of the kitchen and choose between different widths and number of cooking zones.

Gas or electricity - what should you choose?

The choice between gas and electricity is about both the workflow, existing installations and the chef's preferences. Both solutions can work well in a professional kitchen, but they have different properties.

Gas stove and gas cooking top

Gas is still a popular choice in many restaurant kitchens. One of the big advantages is the direct regulation: When the flame is turned up or down, the heat changes immediately. At the same time, powerful gas burners can be used with large pots and pans and are well suited to kitchens with high production.

When choosing gas equipment, it is important to pay attention to the type of gas available. Models can be designed or adapted for, for example, natural gas or bottled gas. Gas equipment must be installed or approved by an authorized gas installer.

Electric stove and hob

An electric hob is an obvious alternative if the kitchen does not have gas. There are several technologies available. The classic electric mass plate is a simple and robust solution, which is suitable for large and heavy pots, among other things. Glass ceramic hobs have a smooth surface, which makes daily cleaning easier.

Induction is the fastest and most precise electrical solution. Here, the energy is transferred directly to the cookware, so the cooking zone reacts quickly when the power is changed. If you primarily need induction, you will find a larger selection in our category of professional induction hobs.

EVO700 - build your own cooking line

Zanussi Professional EVO700 is a modular system for professional kitchens. The series is 70 cm deep and consists of different modules that can be placed next to each other. This makes it possible to combine, for example, gas burners, electric cooking zones, induction and neutral work sections in one continuous cooking line.

The modules are available in different widths, so the cooking line can be adapted to both smaller restaurant kitchens and larger production kitchens. The equipment can be placed on a base, where the space underneath can be used for storage, among other things.

If you are interested in deeper cookers, we can also easily supply the EVO 900 series from Zanussi. They are all 90 cm deep.

How many burners do you need?

A large cooker is not necessarily the best solution. Instead, consider how many pots and pans are usually in use at the same time. For a smaller kitchen, two powerful cooking zones may be sufficient, while restaurants with high production often need at least six burners.

It can also be an advantage to combine different technologies. For example, a kitchen can have gas for general production and supplement with induction for tasks where fast heating and precise temperature control are important.

Choose a stove according to the daily load

When choosing a professional stove, you should not only look at the number of burners and power. The design must also suit the daily load. In a busy restaurant kitchen, where the cooking section works many hours every day, it makes sense to choose heavy-duty equipment that is designed for continuous professional use.

Also look at the workflow around the stove. The placement of ovens, deep fryers, griddles, work tables and refrigerators has a great impact on how efficient the cooking line will be in practice.
