You should also have a professional perform air calculations before choosing the motor and ducts for your hood. When your industrial hood is to be installed, your installer will procure ducts and other accessories to fit your building.
Cosina does not install industrial hoods and does not assume responsibility for incorrect selection of motor size or hood size.
Integrated extraction on machines
Most commercial kitchens use a standard industrial hood that covers all machines emitting steam, fumes, and odors. However, in some cases, it may make sense to purchase an oven or dishwasher with integrated extraction. Call and ask which models offer this option.
Standard industrial hoods
We offer robust industrial hoods/extractor fans with or without motors in many different sizes. Either wall-mounted or suspended from the ceiling. The hood typically extends 30 cm on each side relative to what is placed underneath. The motor is selected according to what it needs to extract.
Tilting pan example: If it uses 12 kW, it will approximately require an air extraction of just under 1400 m3/hour. If it uses 18 kW, it will approximately require 2000 m3/hour.
A hood with an internal motor is noisier than a hood where the motor is located in the attic or outside the building. If you choose a solution with an external motor, you must ensure it is sound-insulated and avoid sound reverberation. Choose a pressure monitor (possibly from Lindab) with light or light and alarm, so you always know if there is pressure in the suction. Check if it is suitable for placement in the attic or outside. Some models are easier to clean than others and are used in harsh environments with high ambient temperatures.
Hoods are usually placed at a minimum height of 200 cm.
Extraction for oven
If you only need extraction for your oven, you can purchase a Unox hood (steam condenser or ventless hood), which can be used for Unox ovens.
Extraction for pass-through dishwasher
And if you only need extraction for your dishwasher, you can purchase a dishwasher with a built-in steam condenser.
