A professional pasta cooker makes it faster and easier to cook larger quantities of pasta in a busy kitchen. Instead of working with large pots on the stove, you get a dedicated cooking vessel where the pasta baskets can be lowered directly into the water and lifted back up when the pasta is ready.
Pasta cookers are particularly suitable for restaurants, canteens and other professional kitchens where pasta is cooked many times during a service. The machine can also free up valuable cooking zones on the stove for other tasks.
If pasta is only cooked a few times a day, a regular pot may be sufficient. For larger volumes, however, a professional pasta cooker becomes a much more practical workstation.
With separate pasta baskets, different portions can be cooked and removed independently of each other. The baskets can be lifted directly from the boiling water and placed for draining, and the large tub means that you do not have to fill and empty pots between each production.
The capacity should be chosen according to how much pasta the kitchen produces at the busiest times. A model with one tub may be sufficient for a small or medium-sized need, while two separate tubs provide greater capacity and flexibility.
Two tubs are, among other things, practical if you need to work with different products at the same time. At the same time, several smaller baskets can make it possible to have different portions running at the same time.
Professional pasta cookers are available in both electric and gas models. Which solution is best depends, among other things, on the kitchen's existing installations and the structure of the rest of the cooking line.
An electric pasta cooker typically requires a powerful electrical connection. For example, the Zanussi EVO700 model with one 24.5-liter bowl has an output of 6 kW, while the model with two 24.5-liter bowls produces 12 kW. There are also gas models for kitchens where the cooking line is based on gas.
A professional pasta cooker is usually a permanently installed machine and should therefore not be considered a large free-standing pot. Depending on the model, both water supply, drain and electricity or gas connection must be taken into account.
This in turn makes the daily workflow significantly easier. Water can be filled directly into the machine, and after use the cooking bowl can be emptied through the drain instead of large pots of hot water having to be lifted and carried.
The name pasta cooker can be a bit misleading, because the machine can be used for much more than spaghetti and penne. Depending on the production, it can also be used for noodles, dumplings and vegetables, among other things.
This makes the pasta cooker interesting in several types of professional kitchens – not just Italian restaurants. For example, it can be an effective solution in Asian restaurants, canteens and production kitchens, where products are continuously prepared in boiling water.
At Cosina you will find professional pasta cookers from Zanussi Professional. The EVO700 series has been developed as a modular cooking system for professional kitchens, so that the pasta cooker can be combined with, for example, a stove, fryer and griddle in a complete cooking line.
If you are in doubt about size, capacity or installation, we will be happy to help you find the right pasta cooker for your professional kitchen.
