What is a combi oven?

A professional combi oven uses full or partial steam to cook food and is able to reproduce specific climatic conditions for each type of cooking. All this translates into the possibility that you can:

  • Cook with "dry" air (i.e. without steam) which allows for higher heat cooking such as grilling, frying and browning, or delicate low temperature cooking such as dehydrating fruit and vegetables.
  • Cook with partial steam (ie with a low percentage of moisture) which allows you to roast, slow cook, braise, stew and much more.
  • Steam cooking (ie with very high percentages of moisture) at any temperature: sous-vide cooking, regeneration, steaming, etc.

Do you need a hood for your combi oven?

Normally, you will have to have some form of extraction for the oven, as steam, smoke and smell are formed, depending on what you are doing in the oven. There are two solutions:

  1. You can place the oven under an ordinary industrial hood. It takes it all. It is probably the smartest solution if you have other machines that require extraction.
  2. You can also purchase a UNOX Steam Condenser which is mounted directly on top of the oven. It takes most of the steam and smell from the oven, even when you open the door. There must be one on each oven if they are next to each other. But if you have two ovens on top of each other on a so-called stacking kit, then one steam condenser is enough. You connect both ovens to it via a hose.

Choose between One and Plus

One

Classic combi oven with touchscreen, steam, washing system and insert core temperature. It can therefore steam, fry, grill, smoke, roast for a long time at a low temperature and more. Fantastic air distribution ensures uniform results and less shrinkage with humidity control. Easily save your recipe for next time. This oven is for you who need to be able to cook different things, for example in a canteen or restaurant, but who only need to use it 2-3 hours a day.

    Plus

    Cheftop Plus has the same good features as One, but it is approx. 20% more energy efficient, and it gives a faster and better baking/roasting result.

    Plus has the important function called Adaptive.Cooking , which adapts your selected baking program live if the door is open for a long time or if the oven is filled to max.

    The Multi.Time technology if you need to make several independent dishes at the same time. The oven notifies you when the various dishes are ready.

    Plus can be accessed from home and with self-diagnostics it notifies itself in the event of a breakdown.

    Three layers of glass provide additional insulation , so you save a lot on electricity, and you don't burn your fingers on the glass.

    Several sizes

      One & Plus combi ovens are made for plates in standard GN dimensions, but they are also available in a baking version, called Bakertop, with 40 x 60 cm plates if you primarily need to bake but also want to make complicated dishes.

      If space is tight, the PLUS ovens are also available in a compact version that only takes up 53.5 cm in width.

      Installation of your combi oven

      Before dispatch, we can provide a technical assembly, so that the oven is Plug'n play and made ready for electricity, drainage and water connection. We can also insert a recipe group that fits the most common dishes you make in a cafe.
