Guide to refrigerated tables

Refrigerated tables are indispensable in a cafe, restaurant or commercial kitchen. They ensure that you always have your preparations ready in the fridge for quick use in cooking, serving or similar situations.

Cooler tables are mainly available in two rust free versions with rounded corners which are easy to clean and disinfect.

  • SS304: Quality stainless steel for commercial kitchens
  • SS201: Cheaper stainless steel which is not suitable for hot environments.

Alternatively, you can also get a model with a glass door, which gives a faster overview and a nice appearance, but also a higher energy consumption.

It is of course important that the table is produced according to applicable regulations, directives and is CE approved.

When you have to choose a cooling table, there are a number of questions you have to decide on.

1. Size and shelf dimensions

It is of course important that you have measured the space where the cooling table is to be placed and that the model can enter through the door and has enough free space to where it is to be placed.

The standard size for shelves is GN 1/1 (53 x 32.5 cm), which is a standard size in the industry, so it fits the gastro trays that are so widespread. Other measurements can be Euronorm 40 x 60 cm, which i.a. used by pizzerias or 41 x 61 cm, which are the Danish standard measurements in bakeries. The last two mentioned are, however, deeper than the standard models for GN 1/1.

Cooler tables are mainly available in depths of 60 cm, 70 cm and 80 cm. Height from 68 cm to 95 cm, depending on whether you need to have some tall equipment standing on them and in different lengths.

2. Should there be drawers in it?

Some models have drawers and other models have doors. On some of the models, it is possible to replace one or more doors with a drawer section of 2 or 3 drawers. If you choose a section with 3 drawers, however, you must be aware that the height of the drawer is quite low and this means that there is only room for smaller items.

3. Ventilated cooling

Ventilated cooling ensures that the cold is distributed in the cooling table in a fast and safe way. This ensures a more uniform temperature at the table. It simply requires that the air can circulate freely and not be blocked. It is important for the food to be kept below a certain temperature. Max. 5 °C for most foods and max. +2 °C for Sushi and other fish. This is something that the Danish Food Authority naturally takes very seriously.

4. Temperature range

The vast majority of refrigerators have a digital thermostat and temperature display. Here you can set the desired temperature. It is important that it can cool down to the temperature required for the food you need to store. A temperature range from -2 °C to +8 °C will be a good solution if you need to store a bit of everything. However, the final temperature depends on the room temperature, the cooling capacity and what it is to be stored.

5. Climate class

Precisely the climate class shows what the maximum temperature in the room must be in order to keep the temperature within the mentioned temperature range.

Here are a few examples:

  • Climate class 3: ambient temperature of maximum + 25 °C
  • Climate class 4: ambient temperature of maximum + 30 °C
  • Climate class 5: ambient temperature of maximum +40 °C
  • Extended temperate class: +10 °C to +32 °C
  • Tropical class: +18 °C to +43 °C (also called tropicalization)

You can of course ensure ventilation in the room or avoid placing the cooling table close to machines that emit a lot of heat.

6. Energy consumption and refrigerant

Energy consumption is a major expense item in professional kitchens and a burden on the environment. One kilowatt costs approx. DKK 1.80 excl. VAT and taxes. This sometimes means that the cheapest equipment can end up being the most expensive.

Statutory energy labeling has been added to all cooling tables, which ensures that it is easy to compare the energy consumption in relation to the cooling capacity. Look for the stated kW/day, i.e. the number of kilowatts the refrigerator uses in 24 hours. It will be a good guideline, but the final consumption depends on the number of times you open the door/drawer and how well the fridge is insulated.

In our opinion, the refrigerant must be an environmentally friendly refrigerant such as R290 or R600a. It has less impact on the environment than some of the other coolants on the market and ensures you a cheaper refill when you need to refill.

7. Rear edge and wheels

The cooling table is available either with or without a back edge. The back edge is often 5 or 10 cm high, and ensures that dirt and other things do not fall behind the cooling table. The vast majority of the refrigerated tables we sell are sold with a rear edge. In addition, it can be an advantage to have wheels fitted to the cooling table, so that it is easy to pull out in connection with cleaning under and behind the cooling table.

8. Noise (decibels)

Products for the professional kitchen require a certain capacity and are therefore also noisier than non-commercial products. In a professional kitchen, you have a lot of equipment in very little space. Therefore, the noise level on all machines is a critical factor both for the sake of the working environment but also for the customer experience.

Look for the decibel level. Often the cheap products will make more noise than the expensive ones. In the private sector, products of max. 38-40 DB are recommended. So our advice is always to go for something that doesn't make so much noise. A change of 3 DB is a noticeable difference. However, the manufacturers have different ways of calculating the noise, so please be a little critical.

9. Adjustable feet, self-closing doors and automatic defrosting

Adjustable feet ensure that the legs can be adjusted if the floor is now crooked. It is an important factor. It can also be used if necessary if the table needs to be raised a little in height, but the higher you set it, the less stable the table becomes.

Things go fast in a professional kitchen and therefore self-closing doors can be a good idea in terms of heat loss. If you release the door at an angle of 90 degrees, it will close by itself.

If the refrigerator table has automatic defrosting, it will evaporate defrost water at fixed intervals. During the period, your food does not have time to rise in temperature. It is clearly something we recommend.

10. Service

All refrigerated tables must be serviced sooner or later. If the cooling unit is on the side, it can be easily removed and replaced. There should be easy access to the dust filter in the front for easy cleaning. The filter should preferably be brushed or vacuumed with a low-power nozzle. The sealing strips wear out over time and must be replaced. If you clean them often they will last longer. Here it is also a good idea if you find a model where you can easily change the strips yourself, so that you avoid a service visit.

Often only 1 or 2 shelves are included for each section. So feel free to consider whether you need more shelves and shelf supports (you can often have up to 6 shelves in each section).

Important: Choose a refrigerated table where you are sure that the supplier can quickly service it. This means that they have spare parts at home and service technicians on hand. Preferably a supplier who at the same time gives a full guarantee on the product so that you do not have to be responsible for fault finding yourself, requisition spare parts via exploded diagrams and bear costs for the technician, which often amount to DKK 5-600 excl. VAT per hour + driving. It will be time-consuming, expensive and mean that you may have to wait 1-3 weeks to get started again.

11. Total Costs

We always recommend our customers to look at the total cost

  • The price for the cooling table excl. VAT, including shipping.
  • Costs for power consumption (number of kW/day x 365 days x DKK 2 excluding VAT and taxes).
  • Operating costs for maintenance and service.
  • Lack of earnings while waiting for spare parts (if you choose a cheap solution without warranty/service).

12. Delivery

Like many other types of industrial refrigerators, a refrigerated table weighs between 100 and 200 kg. - depending on the size of the model. Therefore, it requires that you have a few pieces that are ready at reception. If there is not that much free space at the door and passage, it may be necessary to peel off the packaging (it will often add 5 cm to the height and sides).

Please make sure that there is a clear agreement with the driver that he will call before he arrives.

Delivery takes place to the curb, which means that you are responsible for carrying it yourself. If you are standing with customers, the driver may need to park it on the pavement, on the road or in front of the door. It will be a major inconvenience for you and those who use the road. You can also consider whether it is not worth the money to hire some movers to take care of the delivery (call us on 42613995). They are well trained and have baby carriers, trolleys and other equipment that make the task easier for them. It is often a task that can take some time and if you have the opportunity to plan it, choose a day and time when the business is not so busy.
