Inden du bestiller en røremaskine, skal du vælge om du får brug for hjælpetræk til montering af grøntsagsskærer og kødhakker. Det kan nemlig ikke installeres efterfølgende.
Røremaskinen kan specialproduceres til at lave pizzadej eller marcipan.
Du kan bruge mindre skåle på modellerne på 20 til 100 liter. Dvs. at på en 20 liters røremaskine, kan du både komme en 20 liters og en 12 liters skål på.
ERGO-modellerne skal boltes i gulvet. Den er populær, fordi man kan tage skålen ud uden at skulle tage piskeriset eller dejkrogen af. Den fås som IP54, så den kan blive spulet og er derfor ideel til steder med høje krav til hygiejne.
En røremaskine skal være nem at rengøre! Når maskinen og tilbehøret bliver beskidt, kan det være svært at komme til, men fødevarestyrelsen forventer selvfølgelig at du holder den fin og ren.
CE-kravene betyder bl.a. at maskinen kun må køre, når kedlen er på plads. Det skal forhindre, at du får fingrene ned i røreværktøjet mens den kører. Derfor skal du sørge for, at du vælger en røremaskine med kedel-detektering eller anden ordning der sikrer dette. Rigtig mange røremaskiner har i øvrigt et sikkerhedsgitter monteret, men disse lever ikke op til de gældende krav. I stedet skal der være en plastskærm.
Det er hårdt for maskinen at bearbejde dej. Derfor skal du sikre dig at røremaskinen er kraftigt nok, så dejen ikke kravler op ad dejkrogen men bliver bearbejdet godt i maskinen. Spørg din leverandør, hvor meget kraft røremaskinen skal bruge til dit formål.
Der skal være fødevaredokumentation tilgængelig der viser, at røremaskinen lever op til kravene i maskindirektivet, og dertil at de anvendte materialer der kommer i kontakt med fødevarer er godkendte.
Røremaskiner afgiver støj, og for at bevare et godt arbejdsklima skal du være opmærksom på, hvor meget den larmer. Store røremaskiner skal ofte boltes fast i gulvet, bl.a. for at de ikke skal larme unødvendigt.
For ikke at slide unødvendigt på værktøjet, er det vigtigt at det bruges korrekt. Piskeris er ideelt til æggehvider, mayonaise, flødeskum og lagkagebund.
Spartel er ideel til glasur, frikadellefars, kryddersmør og muffins.
Hvis du skal lave kartoffelmos er det en god ide at bruge spartel først og bagefter piskeris. Eller alternativt anskaffe dig en model der kan bruge et forstærket røreris.
Dejkrogen er god til gærdeje, ciabattedej og doughnut.
Hvis du skal lave mayonaise, kartoffelmos, muffins eller ciabattadej, anbefales en model, hvor du kan sætte en skraber på der automatisk skraber siderne. Derved får du udnyttet alle ingredienserne.
Når du skal beregne hvor meget dej du kan lave ad gangen i en bestemt røremaskine, afhænger det af, hvor meget væske du bruger i opskriften. I en 60 liters røremaskine hvor væsken udgør 60 % af tørstoffet, vil du max. kunne lave 44 kg dej ad gangen.
For at undgå overbelastning, skal der køres ved den anbefalede hastighed ved tunge og seje deje.
Du må aldrig spule en røremaskine, da der vil komme vand i lejerne. Kun få maskiner der opfylder den højeste tæthedsgrad kan holde til det.
Husk at vedligeholde maskinen ved at udskifte kilrem og smøre bøsninger, tandhjul, tandkrans og nålelejer.

On lacquered mixing machines, there is a risk that knocks and shocks result in peeling and thus a risk of rust – especially on the legs as a result of collisions from cleaning machines. It can be upgraded to a stainless steel frame. Stainless steel is impact-resistant, hygienic and easy to clean.
Most models can be fitted with a scraper that automatically scrapes the sides of the bowl from top to bottom. This means that all raw materials sitting on the sides of the bowl are pressed into the whipping or mixing process, and the result is both a larger and more uniform mass and a great time saving when the machine does not have to be stopped for manual scraping during work. As long as it is not something that contains acid or gets very hot, we would recommend a scraper with a nylon blade.
Yes, it is possible to drive with a reduced quantity on many of the models. For example that you can use a 20 liter bowl on a 30 liter model. This makes it more versatile. Call and hear about these options on 42613995.
We offer a 2-year warranty on all Varimixer mixers. However, we have rarely needed it because the machines have been running flawlessly for many years. What breaks is typically the accessories that wear out.

The plastic screen is also available in a removable version that can withstand machine washing. In both versions, ingredients can be filled into the boiler during work. We recommend the removable version, so that any replacement due to wear can be done without technical assistance.
Yes. What is special about the Varimixer is that they run at variable speed - a special technology that makes it ideal for many types of mixtures. And then it is really good for driving dough, where the dough is held firmly and does not slide up along the hook. It is also available in a version for pizza dough.
There is an option to upgrade the IP so that it can withstand water splashes. It is ideal in places where there are high hygiene requirements. It's a complicated subject, so get advice if this is important to you.
