Good advice for buying a crepe machine
Cast iron instead of porcelain
When you go out and invest in a crepe machine, you should always choose a model with cast iron. This provides a much better heat distribution. Stay away from models with porcelain. As soon as a crack is made in the porcelain, you can no longer make crêpes on it without the crêpe breaking.
There are quite a few cheap models on the market from China and with intensive use you may run the risk of them falling apart after 6 months. Therefore, we have, among other things, chose the expensive solution of stocking what we believe is the best model on the market from French Krampouz. The baking plate of the Krampouz machines is, in contrast to the competition's, rough. This means that it absorbs fat better and the crêpe becomes easier to turn.
LUXURY series or STANDARD series?
Crêpe machines from Krampouz's LUXURY series keep the temperature perfectly, and we can say that with a clear conscience, because we have had it tested by a large industrial giant.
Electricity or gas?
The machine is available both in an electric version of 230 V and 400 V and in a gas version that fits gas bottles and natural gas. The 400 V model heats up faster than the 230 V model, which takes about 15-20 minutes to reach 220 ° C. But once they are hot, they do not use much power, as the heating elements and the machine are well insulated.
Important about gas crepe machines
A gas model has a higher ambient temperature, and therefore it is most comfortable to work with an electric model. But if you have to stand outside, and if you don't have access to fixed power, the gas model will be the right choice. Here it is worth noting that the models from the LUXURY series regulate the flame when the plate gets too hot. This is a huge advantage, so that you or your employees do not have to regulate the temperature all the time.
Nozzles for natural gas are included, but the gas models are preset for bottled gas. You can use an 11 kg bottle here. The law stipulates that the connection must be made by an authorized gas specialist. Otherwise, the warranty as well as your insurance will be void due to the risk of fire.
Flex hose, low pressure regulator, tension band and ½” hose connector must be used to install a gas crepe machine. Everything is something we sell in one accessory set for connection .
Single or double crepe machine?
We always recommend buying the pans individually, as they are easier to move around. You must use at least two pans, so that you always have one crêpe going on one plate while you gratinate another crêpe on the other pan. It provides a good flow and means that you can follow along if there is a queue.
Before using the machine for the first time
When you use the crepe machine for the first time, you must "burn off the plate". You do this by applying a little sunflower oil to the plate at 270 degrees, spread it with the grease spreader, let it dry out (and smoke) for 7 minutes and repeat the process approximately 8 times with a little less oil each time until the plate is golden brown and shiny.
Accessories for creperie
You can use it to your advantage The Krampouz chocolate warmer to keep a chocolate sauce or caramel sauce from Odense Marzipan warm with.
When you get started, we recommend that you invest in the crepe starter kit . Here you get a grease remover, dough remover, whetstone, palette knife and ladle (soup spoon) at a sharp price.
You will also need a small tray of water to rinse the dough spreader in. It could be a gastro tray .
The round dough spreader is popular in Denmark and is probably also the easiest to use. The dough is placed in the center and spread out with loose circular movements. The flat one is popular in the crêpe's homeland, Brittany, and can be a little more difficult to use, but you learn it quickly.
You can easily make the pancake batter yourself. There are a lot of different recipes, so find your own favorite. The dough always benefits from resting for an hour in the fridge. You can also buy ready-made mixes where only water needs to be added. These are often quite okay. You can use one smaller mixer , a ordinary whisk or one stick blender with whisk to mix the dough.
