Types of commercial ovens with steam

There are roughly two types of industrial furnaces: Combi ovens and convection ovens.

The convection oven is also called a hot air oven and it is the right choice for you who do not need so many options in your industrial oven with steam. It is just as powerful as a combi oven, and it can be had with some of the same extra equipment - e.g. steam. The difference is that it cannot control the humidity in the oven in the same way as a (digital) combi oven.

The combi oven is for you who need the greatest possible efficiency and uniformity in the result. The combi oven is digital and has both a steam and washing system. The expensive combi ovens, such as Unox's Cheftop Plus and X, have a more advanced steam function called Steam.Maxi. This function adds steam in whole or in part - easily and precisely from 35 to 260 degrees. Combi ovens can better keep the humidity at a stable level, which minimizes drying out of the meat.

In addition, a lot of other smart functions can be included, including Wi-Fi connection, smoker and Multi.Time.

The baking oven with steam is actually a convection oven with a steam function and which is for baking trays in bakery dimensions (e.g. 60x40). Typer af ovne med damp

Der er groft sagt to typer industriovne med damp: Kombiovne og konvektionsovne.

Kombiovnen er til dig der har brug for mest mulig effektivisering og ensartethed i resultatet. Kombiovnen er digital og har både damp og vaskesystem. De dyre kombiovne, som for eksempel UNOX' CHEFTOP PLUS og X har en mere avanceret dampfunktion, som hedder Steam.Maxi. Denne funktion tilføjer damp helt eller delvist - nemt og præcist fra 35 til 260 grader. Kombiovne kan bedre holde luftfugtigheden på et stabilt niveau, hvilket minimerer udtørring af kødet.

Derudover kan der medfølge en masse andre smarte funktioner, deriblandt wi-fi opkobling, smoker og Multi.Time.

Konvektionsovnen kaldes også for varmluftsovn og den er det helt rigtige valg for dig, som ikke skal bruge så mange valgmuligheder i din industriovn med damp. Den er ligeså kraftig som en kombiovn, og den kan fås med noget af det samme ekstraudstyr - bl.a. damp. Forskellen ligger i, at den ikke kan styre luftfugtigheden i ovnen på samme måde som en (digital) kombiovn. Et eksempel på en konvektionsovn med damp er UNOX CHEFLUX.

Bageovnen med damp er faktisk bare en konvektionsovn med damp-funktion, og som er til bageplader i bagerimål (f.eks. 60x40). Se for eksempel BAKERLUX & LINEMISS. Man kan dog også få en digital bageovn med vaskesystem og hele moletjavsen, hvilket i essensen gør den til en kombiovn. Dette kunne f.eks. være en UNOX BAKERTOP.
