Should a professional dishwasher use 230 V or 400 V? This question often arises when a new dishwasher is to be installed in a restaurant, café or other professional kitchen.

Can an industrial dishwasher run on 230 V?

Yes. There are professional dishwashers for 230 V, and they can be a practical solution in places where a 400 V installation is not possible.

However, it is important to look at more than just the voltage. Two machines that are both connected to 230 V may have different fuse requirements and different total power.

You should therefore always check the connection requirements of the specific machine and not simply assume that it can be plugged into a regular socket because the specifications say 230 V.

Why do many industrial dishwashers use 400 V?

A professional dishwasher has to operate the wash pump and other components as well as heat the water in the tank and boiler. This requires a relatively high amount of power – especially when the machine has to carry out many washes in succession.

400 V three-phase installation makes it possible to distribute a higher electrical load over several phases and is therefore often used on professional machines with high heating output.

This is particularly relevant for fast tank dishwashers, where a wash can take a few minutes and the machine must be ready for the next basket quickly.

Does a 400 V dishwasher wash better than a 230 V model?

Not necessarily. The voltage in itself does not say anything about the quality of the washing result.

The difference becomes particularly relevant when water needs to be heated. A machine with a higher available heating output can usually reheat the water more quickly after a final rinse and is thus better suited to many washes in succession.

At low loads, this difference may have limited significance. In a busy restaurant, where the baskets are run through the machine almost continuously, reheating may be important for the actual capacity.

Why is the heating power important?

A professional tank dishwasher works with hot water both during washing and the final rinse. When hot rinse water has been used, new water must be heated to the set temperature.

If the machine's heating power is limited, it may need more time for this heating. Therefore, you should not only look at the manufacturer's stated program time when assessing the machine's capacity.

What is interesting is how quickly the machine can continue under the load it is actually subjected to.

Is 230 V enough for a café or small restaurant?

It may well be enough. If the dishes are washed relatively evenly and the machine does not need to run continuously for long periods, a professional 230 V model may be sufficient.

At high peak loads, you should pay more attention to the machine's overall power and capacity. Here, a more powerful 400 V model may be an advantage, because the dishwasher must be able to keep up when many baskets have to be washed in a short time.

It is therefore better to size according to the amount of washing up during the busiest period rather than according to the total number of guests in a day.

Can the same dishwasher be found for both 230 V and 400 V?

Yes, on some professional dishwashers there are different electrical connection options. Other models are designed for a specific voltage and installation.

This also means that one should not assume that a particular machine can be changed from 400 V to 230 V – or vice versa. This should be stated in the manufacturer's technical specifications.

230 V does not necessarily mean a regular socket

It is a common misconception that 230 V automatically means that the machine can be connected to a regular socket.

The necessary installation also depends on the machine's power and power consumption. A professional machine may therefore require a dedicated group and a different fuse or connection than regular kitchen equipment.

Always check the manufacturer's requirements for voltage, phases, amps and total connected power, and have an authorized electrician assess the installation if in doubt.

Should you choose 230 V or 400 V?

If both options are available, the choice should primarily depend on the machine and the expected load.

For a smaller kitchen with moderate dishwashing, a 230 V model can be a great solution. On the other hand, if the machine is to handle many quick washes in succession, you should pay extra attention to the heating effect and reheating – and here 400 V will often be relevant.

The most important thing is therefore not to choose 400 V just because it is "more powerful", but to ensure that the machine's capacity and installation match the actual operation.
