Goes down to -5 degrees in 20 min. The temperature then rises slowly (+2 to +18 and to +12 degrees). These settings can be changed. The cooling process and the proofing process are important for the quality of your baking. Bring the dough to life via several steps. Gradually increasing temperature and controlling humidity.
